I have an .anim file in Unity that has the position and rotation of the left and right hands and I want to use this data as the IK transforms in UMotion for the hands. Is this possible to do?

Yes. First you need to setup an IK rig using the IK setup wizard (in Config Mode). Then back in Pose Mode you can click on "Edit --> FK to IK Convertion" menu entry in the Clip Editor to convert the FK animation of your hands to IK.
